Soupe à la Courge Mousquée (v)   – butternut squash soup

Vouluté de Chataignes– chestnut soup

               Soupe à l’Ognion Gratinée – french onion soup

     watercress, champagne vinaigrette

Salade au Saumon Fumé – spinach, smoked salmon, sun-dried

     tomatoes, goat cheese, apple cider vinaigrette

Boudin Blanc – white sausage, with dijon, over carmelized apples and

port wine demi

Jalousie de Saumon – salmon in puff pastry with dill beurre blanc

Flan de Champignon (v) – mushroom custard

Escargots au Chablis – Snails simmered in garlic white wine butter sauce

Soufflé au Crab – crab meat soufflé

Brie en Croûte – baked brie and apricot in puff pastry

Fletan Incrusté des Noix de Macadamia- Macadamia encrusted Halibut, pommes gratins

Filet de Bison – Buffalo tenderloin with baby vegetables, sweet potato mash

Poitrine de Canard – sliced duck breast with blackberry cassis and sweet potato mash

Roulade de Légumes (v) – Vegetable roulade, sweet potato, turnip, bell pepper rolled in sauted spinach

Homard Thermidor – lobster tail with dijon, mushroom, tarragon, mornay, pommes gratins
