White Asparagus Soup – Velvet smooth, purple asparagus and chive oil garnish

2 nd course – Salad

Beet Tartare – brunoise beets, pickled red onions, raisins

Arugula Salad – Candied orange, goat cheese, spiced pecans

3 rd course – Appetizers

Basil Flan –tomato carpaccio , balsamic gastrique, seared watermelon cubes

Duck Confit Croquettes – Creamy duck confit, breaded and fried, aioli

Mini Beef Wellington – Beef Tenderloin, foie gras, puff pastry, demi glace
